Abhishek Benny, Badrinath Devasani, Libny Patrick, and Mukil Kumar chose The Spread of Biryani as the focus of their visual storytelling project. Biryani, a rich and aromatic rice dish, is more than just food, it is a tapestry of history, culture, and culinary innovation. Originating in Persia with dishes like pilaf, it traveled across continents through trade, migration, and empire, evolving at every stop.
The Mughals brought it to India, where it fused with local flavors to create diverse regional varieties such as Lucknowi, Hyderabadi, Kolkata, and Malabar biryani. Over centuries, biryani became a global phenomenon, adapting to new ingredients and cultures while retaining its essence as a symbol of celebration and comfort. Today, it stands as a testament to cross-cultural exchange, embodying the layered histories of people, places, and traditions.
